Potato Podimas



Ingredients
  • Potato : 3 (medium)
  • Onion : 1/2 cup
  • Oil : 2 tbsp
  • Mustard seeds : 1 tsp
  • Urad dal : 2 tsp
  • Chana dal: 1 tsp
  • Cumin seeds : 1 tsp
  • Curry Leaves : 5-6 leaves
  • Green chilies : 3-4 (finely chopped)
  • Garlic Pods : 4 (pressed)
  • Turmeric Powder : 1tsp
  • Coriander Leaves : For garnishing
  • Salt : to taste
Method 
  • Boil the potatoes and peel the skin off. Cut half of them into small cubes and slightly mash the remaining potatoes with your hand.
  • Heat oil in a kadai (a frying pan) add mustard seeds, cumin seeds, urad dal and chana dal after it sputters add the curry leaves, salt and onions.
  • Saute them for a few minutes or till the onions turn into translucent.
  • After that add pressed garlic and turmeric powder fry them for 2-3 minutes.
  • Then finally add the potatoes and mix them well.
  • Let it sit in the heat for few minutes and remove it.
  • Garnish it with coriander leaves.
