Ingredients
- Eggs - 4
- Onion - 1 medium
- Capsicum/Bell Pepper - 1 big
- Green Chilly Paste - 1/2 tsp
- Coriander/Cilantro leaves - few sprigs
- Cumin/Jeera seeds - 1 tsp
- Black Pepper Powder - 1/4 tsp
- Ginger Garlic Paste - 1 tbsp
- Turmeric/Haldi - 1/4 tsp
- Oil - 1 tbsp
- Salt
Method
- Finely chop onions, capsicum and cilantro. I used
a combination of yellow, green and red capsicum.
- Heat about 1 tbsp oil in a kadhai/wok and add
cumin seeds, ginger garlic paste and green chilli paste. You can use
finely chopped ginger, garlic and green chillies
instead of paste. Saute for few seconds. Then add finely
chopped onions and little salt.
- After onions turn soft, add chopped capsicum.
Stir-fry till capsicum is cooked. You can
add any other veggies like cabbage, green peas along with capsicum.
- Crack the egg shells and add eggs in a bowl. Add
little salt, black pepper powder to the eggs and beat well. Pour the
whisked eggs in the wok. Continue cooking while stirring till
eggs are cooked and moisture is lost. You can add 1/4 tsp garam
masala or any other spice mix as well.
- Garnish with finely chopped cilantro and serve with roti or bread
